The work
- • Run a section under Sous and Junior Sous Chefs across busy services
- • Drive consistency of recipes, plating and Maybourne 5-star standards
- • Manage mise en place, stock rotation and section prep daily
- • Train Commis Chefs and apprentices on station basics
- • Liaise closely with restaurant and afternoon tea teams on timings
- • Support seasonal menu changes, dish development and tastings
- • Maintain immaculate kitchen, fridge and section hygiene throughout shift
- • Champion HACCP, allergen and food safety compliance
- • Cover sections across breakfast, lunch, dinner and afternoon tea
- • Represent Claridge's culinary standards on every plate
