About the hotel
Greywalls Hotel and Chez Roux is a historic Arts & Crafts country house hotel in East Lothian, just 30 minutes from Edinburgh, overlooking the world-famous Muirfield Golf Course. Designed in 1901 by Sir Edwin Lutyens and set within six acres of enchanting walled gardens, it is one of Scotland's most cherished small luxury properties and welcomes a discerning international clientele of golfers, gastronomes and country-house devotees.
The work
- • Act as the driving force behind all hotel operations, guest experience, people leadership and commercial delivery
- • Lead and inspire every department to uphold exceptional five-star service standards
- • Champion the Chez Roux restaurant concept and maintain its strong culinary reputation
- • Own the P&L and drive commercial performance across rooms, F&B, weddings and private events
- • Partner closely with ownership on the major refurbishment planned for late 2026
- • Curate an elevated guest experience that honours the property's rich Lutyens heritage
- • Build and develop a high-calibre team across front of house, housekeeping, kitchen and grounds
- • Represent the hotel within the Scottish luxury hospitality community and with key golf partners
- • Manage health & safety, compliance and operational standards across the estate
- • Drive occupancy, ADR and revenue strategy in partnership with sales and revenue teams
This role is for you if…
- • You have proven experience leading a small luxury or country house hotel as GM or Deputy GM
- • You thrive on being a visible, hands-on presence with guests and team
- • You have a strong commercial mind and a track record of improving financial performance
- • You are passionate about heritage properties, gardens and distinctive design
- • You are comfortable leading a property through a major refurbishment and renewal
- • You hold yourself and your teams to exacting standards
This role might not be for you if…
- • You prefer a large-format branded hotel environment
- • You are uncomfortable with the rhythm of a small, highly personal country house property
- • You are not available to lead front-of-house during key weekends and peak golf season
- • You prefer back-of-house or purely strategic roles
