Hotel Director
THE PIG at Harlyn Bay · Padstow, South West England
About the hotel
THE PIG at Harlyn Bay is the group's flagship Cornish retreat, perched above the spectacular surf beach at Harlyn Bay, just a short drive from Padstow. Set within a historic 15th-century house with sea views and wild Atlantic surroundings, the hotel runs two busy restaurants and champions local Cornish produce, coastal foraging and kitchen garden cookery. With its informal luxury ethos and a fiercely loyal guest following, THE PIG at Harlyn Bay is one of the most distinctive boutique hotel experiences in the UK.
The work
- • Hold full operational oversight of the hotel, kitchen garden, grounds and wider estate
- • Lead two busy restaurants during the peak summer season, maintaining THE PIG's renowned food and drink standards
- • Drive commercial performance, manage budgets and monitor KPIs against revenue targets
- • Build, develop and inspire a high-performing team across all departments
- • Champion guest experience at every touchpoint, responding personally to feedback and building relationships
- • Collaborate closely with group functions on brand strategy, commercial initiatives and operational planning
- • Act as the senior leader and cultural ambassador for THE PIG brand within the property
- • Maintain operational standards and health & safety compliance across the estate
This role is for you if…
- • You have a strong Food & Beverage background and a genuine passion for produce-led hospitality
- • You have proven senior leadership experience in a destination hotel or high-quality F&B-led property
- • You thrive in a hands-on role where guest interaction is as important as commercial accountability
- • You are an authentic leader who naturally embodies an informal yet high-achieving culture
- • You enjoy working in a unique, rural or coastal setting where every day brings something different
This role might not be for you if…
- • You prefer a corporate hotel structure over an independent, personality-led brand
- • You are primarily suited to back-of-house or non-guest-facing leadership
- • You are uncomfortable with the pace and unpredictability of a destination hotel in peak season
- • You would struggle to balance hands-on guest interaction with financial accountability
