Brown’s Hotel · London, Mayfair
full-time
About the hotel
Brown's Hotel is London's oldest luxury hotel — a Rocco Forte property tucked into the heart of Mayfair. Founded in 1837 by James Brown, former manservant to Lord Byron, it has hosted Oscar Wilde, Rudyard Kipling, Agatha Christie and countless luminaries across nearly two centuries of history. Its gracious townhouse rooms, celebrated Drawing Room restaurant and legendary Charlie's Bar make it one of the defining addresses of the capital.
The work
- • Serve as the charming, confident face of The Drawing Room — the first impression and lasting memory for every guest who dines with us
- • Master deep menu and wine knowledge, delivering discreet and assured food and beverage recommendations across tasting and à la carte service
- • Lead the floor during busy services, managing sections with precision and composure, ensuring every guest experience exceeds the five-star standard
- • Handle special requests, dietary requirements and landmark occasions with the meticulous attention to detail that Brown's guests expect
- • Build genuine relationships with regulars, maintaining detailed guest profiles and anticipating preferences before they are voiced
This role is for you if…
- • You take genuine pride in hospitality and consider exceptional floor service an art form, not a job description
- • You're naturally warm, polished and composed under pressure — the kind of professional a full restaurant doesn't unsettle
- • You have real wine and food knowledge and can hold a confident, knowledgeable conversation with discerning guests
- • You're drawn to historic, character-rich settings and appreciate the weight of nearly 200 years of tradition behind Brown's name
This role might not be for you if…
- • You prefer a high-volume, transactional environment over the considered world of fine dining and bespoke guest relations
- • Consistent five-star presentation and instinctive discretion don't come naturally to you yet
- • Leading a section independently and quietly coaching junior floor staff isn't something you're ready for
