The work

  • Lead the day-to-day Food & Beverage operation across the hotel, restaurants, lounges and bar
  • Set the tone of service across all outlets, delivering personal, memorable and anticipatory guest experiences
  • Recruit, develop and inspire a high-performing F&B team through coaching, training and clear standards
  • Monitor and manage departmental budgets, wage costs, rotas and stock in line with financial targets
  • Identify and drive revenue opportunities across food, beverage and events
  • Maintain impeccable service standards and uphold the hotel's AA Rosette and luxury positioning
  • Partner closely with Head Chef and Sommelier to continually refine menus, pairings and guest journeys
  • Handle guest feedback with confidence and a genuine service-recovery mindset
  • Ensure full compliance with licensing, food safety, health & safety and allergen legislation
  • Deputise for the General Manager on duty and act as a senior on-floor presence during peak service

This role is for you if…

  • You have proven F&B management experience within a four- or five-star hotel or quality restaurant
  • You lead from the floor and set standards by example rather than from the office
  • You are commercially minded and comfortable working to budgets, GPs and payroll targets
  • You enjoy coaching, developing and retaining high-performing hospitality teams
  • You thrive in a rural, estate-based environment and have your own transport
  • You are passionate about food, wine and guest experience

  • You prefer back-of-house or non-guest-facing roles
  • You are not available to work weekends, evenings and peak holiday periods
  • You are uncomfortable balancing service standards with commercial accountability
