The work

• • Run your own section to the highest culinary standards during busy service periods
• • Prepare mise en place, sauces and elements for rosette-level dishes
• • Work closely with the Head Chef and Sous Chefs to deliver flawless service
• • Maintain uncompromising standards of hygiene, HACCP and allergen management
• • Support menu development and seasonal changes across restaurants and banqueting
• • Mentor and coach commis chefs and kitchen porters on your section
• • Ensure consistent quality, portion control and presentation on every plate
• • Manage stock, ordering and section waste in line with GP targets
• • Build strong relationships with Irish producers, fishermen and growers
• • Represent Dromoland's culinary reputation with pride and professionalism

This role is for you if…

• • You have proven Chef de Partie or senior commis experience in a rosette or luxury kitchen
• • You are calm, organised and precise under service pressure
• • You take great pride in craft, produce and the details of your section
• • You are a generous teammate and enjoy coaching junior chefs
• • You are excited to cook in a world-class Irish castle hotel
