Jesmond Dene House is an independent 4 Red Star luxury boutique hotel set in the lush Jesmond Dene valley, five minutes from the centre of Newcastle upon Tyne. With 40 individually designed bedrooms, a 2 AA Rosette restaurant and private dining spaces tucked into an Arts & Crafts mansion, the hotel welcomes a discerning clientele who come for considered design, generous hospitality and Executive Chef Gareth Rayner's highly regarded modern British cooking.

The work

  • Run your own section to high rosette standards under Executive Chef Gareth Rayner
  • Prepare mise en place and cook dishes consistently across lunch and dinner services
  • Contribute ideas to seasonal menu development and dish refinement
  • Maintain uncompromising food safety, HACCP and allergen standards
  • Mentor and support commis chefs and kitchen porters on your section
  • Work with local North East producers, growers and fishermen
  • Ensure consistent portion control, presentation and GP discipline
  • Cover adjacent sections as required across a small, tight brigade
  • Support private dining, weddings and events in addition to the main restaurant
  • Represent the Jesmond Dene House culinary reputation with pride

This role is for you if…

  • You have proven Chef de Partie or strong senior commis experience
  • You take pride in your section, your produce and your presentation
  • You are calm, consistent and precise under service pressure
  • You enjoy working in a close-knit, values-led brigade
  • You are hungry to grow under an experienced Executive Chef

  • You prefer casual dining or pub kitchens
  • You are not available for evenings, weekends and peak service
  • You are uncomfortable in a rosette-level luxury environment
  • You prefer a large city-centre volume brigade
