About the hotel

Sheen Falls Lodge is a 5-star Relais & Châteaux country house hotel set within 300 acres of forest on the edge of Kenmare Bay in County Kerry. Holding two Michelin Keys, the lodge is home to Ireland's largest public wine cellar with over 10,000 bottles and a fine-dining restaurant celebrated for its local Wild Atlantic produce. The work

• • Deliver an exceptional wine service in the fine-dining restaurant and private dining rooms
• • Advise guests on wine selections and pairings with genuine warmth and expertise
• • Manage wine sales, inventory oversight and cellar stock rotation
• • Maintain and enhance the lodge's renowned wine collection of 10,000+ bottles
• • Conduct cellar tours, masterclasses and tastings for guests
• • Train F&B colleagues on wines, new additions and service standards
• • Source new wines and liaise with importers and suppliers
• • Promote wine sales and upsell premium bottles and pairings
• • Support the Restaurant Manager and F&B team with service flow
• • Uphold Relais & Châteaux and Michelin standards in every interaction

This role is for you if…

• • You have 2+ years of sommelier or wine service experience
• • You hold WSET Level 3 or a Sommelier Diploma, or are actively studying
• • You come from a fine-dining hotel or restaurant background
• • You have strong presentation skills and enjoy hosting guests
• • You are fluent in spoken and written English
• • You love the nuance of wine and thrive in a Michelin-level service environment

• • You prefer high-volume casual dining environments
• • You are not available to work evenings, weekends and bank holidays
• • You are not comfortable engaging confidently with discerning guests
• • You have no interest in continuing wine study and development
